Episode 3 of the Little Paris Kitchen

The finest ingredients destined for the dinner tables and beyond all come from the world’s largest wholesale market just south of Paris in Rungis. This week, I take a trip there and attempt to persuade some stubborn butchers to change their breakfast habits with my Japanese twist on the classic steak tartare. I also pay a visit to Marie-Anne Cantin, one of the best fromagères in Paris, where she helps me pick out a cheese for my version of a tartiflette – delicious cheesy potato nests.

If you're like me and enjoy making simple foods that make the most of good ingredients, then you'll love my fig and chicken liver salad, a simple, but elegant dish that makes a fabulous spring starter. I also take a quick trip to one of Paris's oldest bistros, La Fontaine de Mars, where I taste chef Pierre's signature cassoulet. I put my own twist on the his dish and transform it into a light and quick soup with all the flavors of this hearty southwest France staple, but none of the hassle.  For dessert, I get the chance to create my very own chocolate bar, which is perfect for my most decadent dinner party dessert, chocolate mousse.
