Episode 4 of the Little Paris Kitchen
Many of my recipes are inspired by the bistros of Paris, and in this episode I head to the award-winning restaurant Frenchie, where I sample head chef Gregory Marchand’s innovative dishes. Inspired by his delicate balance of flavors, I create a breathtakingly colourful winter salad with a goat' s cheese mousse—the perfect combination of salty and sweet.
I also cook up some of my favourite savoury dishes such as my lemon and lavender chicken. Lavender in a savoury dish might sound unusual, but bashing the buds in a pestle and mortar releases a fragrance signature to Provence. And while a cake might conjure up thoughts of multiple tiers and buttercream icing, my savoury cheese, pistachio, and prune cake is a delicious substitute for a sandwich, and a perfect portable meal.
Then, in the weekend fashion of Parisians, I head to Trouville, on the coast of Normandy, where I hope to impress a local fishmonger family with my take on the classic Moules Marnières, using a splash of the local cider. Not forgetting dessert, I look to recreate the French patisserie experience at home with my grapefruit and pepper meringue tartlet.
