eat/share/listen with Kathryn Wilson

This month designer and creative mind Kathryn Wilson joins me for my eat/share/listen Q&A. Kathryn and the team at Slater Design worked on the revamp of my website earlier this year.  You'll find Kathryn on Twitter here: @WordsByKathryn.

(eat) my fail-safe dish...? For me that depends on the season. In the summer it could be seared tuna with a citrusy dressing or a griddled halloumi salad. In winter I like roast winter vegetables with garlic and rosemary, and I make a lot of risottos. I like fresh, seasonal produce and I tend to buy good-quality ingredients that are pretty easy to pull together.

(eat) favourite restaurant/cafe/bar and why…? I live in Dublin so my favourites are all based in the city. Coppinger Row is my favourite restaurant in town, their dishes use great local, seasonal produce which is simply prepared. The food is always delicious, there's a relaxed atmosphere and they have a dedicated gin and tonic menu, so it never disappoints! There are so many great cafés in this city at the moment so I have to mention a few: Kaph, The Fumbally, Hatch & Sons, Bibi's and The Cross Gallery Café are all worth a visit. The Bernard Shaw is a great bar and is hard to beat in summer – for the ginger beer, the art and the double decker bus outside serving pizza downstairs and seats on the top deck.

(share) can't get through the day without... A few months ago I would have said coffee, however recently I'd say a green smoothie. One of my clients is Ness and they make slow-pressed fruit and vegetable juices and blends. I was inspired by their pop-up juicery and started making their blend 'The Maestro' at home every morning. It contains spinach, blueberries, porridge oats, coconut oil, banana, yoghurt and water.

(share) recent inspiring find I've discovered online... I saw a preview of the Make Shape Change animation at Offset (a three-day creative festival held annually in Dublin) last month and it has since been launched online. It's a really lovely film that encourages young people to think about design and poses the question: 'If for one day you had the power to make your world work better, what would you change?'. I think it's a great idea and the animation is gorgeous. You can watch it here.
