Recipe: Pickled chillies (plus video)

I love pickled chillies and always have a jar of these in my fridge. Super easy to make and a great way of adding some kick to your food!

P.S. Also goes great with the Veggie noodle soup.

Pickled chillies

150g long green chillies
150ml warm water
100ml rice vinegar
1 tbsp salt
2½ tbsp icing sugar (icing sugar is easier to dissolve but regular sugar will also do)


Jar, for the pickled chillies (will need to be sterilised)
Gloves (optional) – for preparing the chillies


1. Thinly slice the chillies and rinse in warm water (this is to remove the seeds and some of the heat of the chillies).

2. Drain and put the chillies (minus the seeds which will be at the bottom of the sieve) in a jar.

3. Stir together the other ingredients until the sugar and salt is dissolved. Pour this over the chillies and cover. Place in a jar in the fridge.

  1. What a good idea.. I add chillies to pickles but never thought of pickling them on their own. Will make a change from freezing or drying..Thank you for pointing out the obvious

  2. Great video and so simple! Last year I had a glut of chillies ranging in heat from medium to very hot. I froze a lot of them – those that I didn’t use immediately or give away by the pound to friends and friends of friends so I must just try your recipe out – I know that some frozen items can be later pickled, so I await the results.

  3. Very excited at your chilli recipe I have just seen on TV. A fabulous way to use up an excess which I often have. It is just a case of how long it can be kept for. It reminds me of my mother who, when she had an excess of ginger she would peel and slice the ginger, put it in a jar and cover with white wine and kept in the fridge for later use.
