Day 4 at Fäviken

Picking the buds and flowers off meadow sweet which has a slightly medicinal vanilla and almond aroma.

A sugar syrup is later poured on to the meadow sweet and left to infuse. It's used in a dessert.

 

Cutting birch twigs.

Trimming the Birch twigs to make skewers for langoustines.

 

Making cookies for the guests breakfast (each cookie has to weigh 40g).

 

A hundred old Swedish ice cream maker used in service to make fresh ice cream.

 

Ice and salt are used to cool the cream down. It was hard work cranking the handle but the result is a denser and richer ice cream. Definitely worth it!
