For the perfect light summer meal, try my delicious chard and gorgonzola ravioli (for a vegetarian you can substitute with dolcelatte). You can find the recipe in my latest Evening Standard column.
Wow, that looks really delicious. I love how you changed up the presentation and made a single ravioli. It looks so much more individual and personal to serve to guests!
Hi Rachel. Love your cosmopolitan cook series. Just wanted to know in which recipe book of yours would I find the recipes featured in the cosmopolitan cook series?
Hi, so nice to hear you enjoyed the series. These recipes will be in my new book ‘Rachel Khoo’s Kitchen Notebook’ due out in February 2015. It’s available for pre-order in the UK here: http://www.amazon.co.uk/Rachel-Khoos-Kitchen-Notebook-Khoo/dp/0718179463/ref=sr_1_5?s=books&ie=UTF8&qid=1407315128&sr=1-5&keywords=rachel+khoo Thanks!
We have loads of green chard in the garden so will try it with that…. You didn’t mention about cooking the stems? How do you cook them….? Love all your posts and fun ideas… Irena now living in Languedoc Rousillon…. we have a vast organic veggie garden very lucky lots to have fun with…
Hi Irena, if you refer back to the final paragraph of the recipe it tells you the stems need to be blanched for 4 minutes 🙂 http://www.standard.co.uk/lifestyle/esmagazine/rachel-khoo-giant-chard-ravioli-with-gorgonzola-9638512.html
